Bagna càuda is a warm Italian dipping sauce from Piedmont in northern Italy. The name roughly means “hot bath.” It’s traditionally made with anchovies, lots of garlic, olive oil, and sometimes butter. It’s served warm, almost like fondue, and you dip vegetables into it—things like peppers, celery, fennel, artichokes, cabbage, or even bread. The flavor is savory, garlicky, salty, and rich. Even though anchovies are a main ingredient, they usually melt into the sauce rather than tasting like whole fish.
