Here's how you make Harcha:Start by mixing the semolina and salt in a bowl.Gradually add in the melted butter while stirring.Slowly pour in the milk (or water) until you have a soft, pliable dough.Knead the dough for a few minutes until it's smooth.Divide the prepared dough into several equal portions and shape them into small, round pancakes about 1/2 inch thick.Heat a non-stick skillet, griddle, or cast-iron pan over medium-low heat.Place the Harcha on the hot skillet and cook for 3-4 minutes on each side until golden brown and crispy.Serve them warm with your favorite honey, jam, or a choice spread.The key to perfect Harcha is achieving that beautiful crispy crust while keeping the inside soft and fluffy.
