Well, coming up to Christmas, my favourite time of the year,  I'm taking the step to mitigate the risk of human fallibility, and that attached to using and applying general rules. I've called in the pro, Marc Malouf of I Heart Wine and Wines Worth Writing About to set me straight, or at least give me some infrastructure to guide my food and wine pairings moving forward.
