[RECIPE IN SHOW NOTES] Poached fruit is warming, bloody delicious and extremely ridiculously easy to make good. Killer Crumble Serves 4–6 600 g–800 g poached fruit (use whatever’s in season – apples, pears, quinces or stonefruit such as peaches, nectarines or plums all work well) CRUMBLE TOPPING 100 g crisp amaretti biscuits 150 g plain flour 80 g caster sugar 80 g light muscovado sugar 1/4 cup rolled oats 150 g butter, melted For the crumble topping, put the amaretti biscuits in a snapback bag and bash with the rolling pin until finely crushed (or pulse them briefly in a food processor), then tip into a medium bowl and stir in the flour, sugars and rolled oats. Add the butter and combine with the dry ingredients to form a crumble. Spoon the poached fruit out over the base of a medium-sized baking dish, scatter over the crumble topping and bake in the oven for 20–25 minutes, or until golden and bubbling.
