As you listen to the leaves crunching underfoot, think of the candles you will light this upcoming Samhain night.What am I reading?https://bookshop.org/shop/witchywomanwalkingMagic Lessons, Rules of Magic, Practical Magic, The Book of Magic by Alice HoffmanIntuWitchin: Learn to Speak the Language of the Universe and Reclaim Your Inner Magik by Mia MagikWhat am I playing on repeat?Have Love Will Travel by the SonicsWhat’s for dinner?Vegan Mushroom Stew3 tablespoon olive oil 1 yellow onion, diced1 cup sliced carrot1 cup sliced celery16 oz. baby Bella mushrooms, halved6 cloves garlic, thinly sliced2 teaspoon dried thyme1 teaspoon oregano 1/2 teaspoon sage 2 tablespoon flour1/4 cup balsamic vinegar2 tablespoon soy sauce16 oz. baby yellow potatoes, halved1 cup uncooked red lentils 1 (14.5 oz.) can tomato sauce3 cups vegetable brothSalt and pepper Heat oil in a large pot over medium heat.Add onion, carrot, and celery along with a couple pinches of salt and pepper.Cook, stirring occasionally for 8 minutes.Add mushrooms, garlic, thyme, oregano, sage, and a couple pinches of salt and pepper.Cook, stirring frequently, for 3-4 minutes.Add flour and stir to evenly coat everything. Cook, stirring frequently for 1 minute.Stir in balsamic vinegar and soy sauce to deglaze the pan, scraping the yummy bits off the bottom.Add potatoes, lentils, tomato sauce, and broth, along with a couple pinches of salt and pepper.Bring to a simmer over medium-high heat, stirring occasionally so that the lentils don’t stick to the pan.Turn heat to low and simmer gently for 10-15 minutes or until the potatoes are fork-tender.
