Dr. Downs is an assistant professor and researcher in the Department of Food Science and Technology at the University of Nebraska–Lincoln. Her work focuses on identifying allergens in processed foods as well as characterizing the proteins that cause food allergies. Dr. Downs hopes that her research will positively impact the lives of allergic individuals.
