In Ancient Rome, Soldiers were paid in salt, it was at that time a very expensive substance and mining salt was a hazardous task left to slaves or prisoners. Salt on the table was a sign that one was well off. If one were to sit near the host were described as above the salt and those further or less favored were below the salt.
