His mother, Isolina Vargas, taught him all about the flavours of Creole cuisine.  In 2001, he took over "La Red", his mother's restaurant founded in 1981.  In 2015, Isolina opened its doors, a charming historic mansion in bohemian Barranco where you can eat Peruvian comfort food from Creole cuisine. It is a tribute to her mother whose culinary proposal aims to rescue flavours forgotten in old cookbooks and bring attention to the food of yesteryear.✨José del Castillo is een trotse Peruaan.  Op 28-jarige leeftijd ontdekte hij zijn roeping voor de Peruaanse gastronomie.
