91: Super Simple Summer Meal Planning for When You Don't Want to Stick to a Plan

It’s been nearly 60 episodes since I last gave a lesson in meal planning which is weird considering how most of my internet traffic comes from my 2019 blog post about creating a rotating meal plan. Truthfully, I got burnt out on meal planning and needed a shift in that area. I was living in a home where I hated my kitchen, couldn’t keep it clean, and couldn’t find joy in cooking. It seems everything has changed. I love my new kitchen, it’s energetically welcoming, I want to cook more often and I really enjoy eating delicious, healthy-ish foods that I cooked myself. And I also really enjoy taking shortcuts and making cooking as quick and simple as possible without being plagued by guilt over not cooking 100% from scratch.
