In questa puntata parliamo di percezioni, emozioni e comportamenti dei consumatori del vino con Sara Spinelli di SemioSensory che si occupa proprio di questo e sta conducendo con la Società Italiana di Scienze Sensoriali la ricerca “Italian Taste” sulle preferenze alimentari degli italiani.Ci sono persone che sono più sensibili ad un composto che si chiama PROP, che ha un sapore amaro. Alcuni non lo sentono, proprio non sentono nessun sapore. E’ una cosa abbastanza comune… Quelli che invece hanno un indice di sensibilità alto sentono molto più forti tutte le sensazioni: l’amaro, l’astringente, l’acidità e anche il bruciore, quello legato alla sensazione dell’alcol in bocca. In questa puntata parliamo di percezioni e di emozioni nei comportamenti dei consumatori del vino, di neuromarketing del vino . E ho l’ospite giusta oggi, perché con noi c’è Sara Spinelli. Sara è di Prato, è Dottoressa di ricerca in Discipline Semiotiche all’Università di Bologna, collabora con la Sensory Unit dell’Università di Firenze, a ricerche sul ruolo proprio delle emozioni nella percezione dei prodotti, e sullo sviluppo di metodi per lo studio dei comportamenti dei consumatori. È anche consulente, con SemioSensory, e collabora con la Società Italiana di Scienze Sensoriali, che ha sede a Firenze, e in modo particolare si occupa del progetto Italian Taste.Benvenuta, Sara.Sara: Grazie. Dunque, cominciamo proprio da Italian Taste, perché questo è un progetto di ricerca che state portando avanti con la Società Italiana di Scienze Sensoriali, ne parlerai anche ad Alba il prossimo 18 febbraio presso la Scuola Enologica, al secondo convegno di psicologia e marketing enologico. Dicci, Sara, che cos’è Italian Taste?Sara: Sì. Allora, Italian Taste è un progetto molto grande che abbiamo sviluppato all’interno della Società Italiana di Scienze Sensoriali, è un progetto di ricerca, e vorrei dire anche due parole proprio su come è strutturato, perché penso possa essere interessante, perché è basato sul knowledge sharing, quindi…Stefano: Knowledge sharing… quindi la condivisione di conoscenze, giusto?Sara: Sì. Conoscenze attraverso… noi siamo un’associazione no-profit e abbiamo tanti soci che sono sia nei centri di ricerca nelle università che nelle aziende, in particolare alimentari, e abbiamo voluto trovare un modo di mettere insieme tutte queste competenze, che erano più applicative o più di ricerca, e proprio questo progetto, che ha l’obiettivo di studiare, costruire un grande database sulle preferenze alimentari e le caratteristiche dei consumatori italiani – per questo si...
