All'ombra della Tour Eiffel sono nati i dolci più sontuosi, grandi classici, ma anche quelli più semplici. Torniamo in Francia per parlare di una gourmanderì a cavallo tra tradizione e modernità, con un dolce che si mangia in un lampo. Messier, madam, l'Éclair. Siamo alla corte di Caterina De' Medici, dove il suo pasticciere invento' questa pasta poco zuccherata, con ingredienti molto, molto semplici. Si partiva da acqua, burro, farina e poi le uova. Ogni tanto veniva aromatizzata con acqua di rose per dare un tocco esotico. Veniva messo tutto sul fuoco per asciugare la pasta e poi si aggiungevano le uova. Una volta messa in forno questa pasta si gonfiava restando completamente vuota. All'interno, la forma non era regolare, anzi sembravano tanti piccoli cavolfiori o cavolini di Bruxelles. Il nome scelto fu quindi Pasta Choux, pasta a forma di cavolo, che è diventato un vero e proprio termine enciclopedico Scommetti sulla voce!
