El vino contiene una amplia variedad de moléculas cromóforas (las que dotan de color) que varían en función del tipo de vino, de su edad, de las formas de elaboración, etc., por lo que cada vino presentará unos colores y tonalidades diferentes. Los polifenoles son las moléculas responsables del color, tanto de la uva como de los vinos, pero, gracias a su poder antirradical y a su capacidad de consumir oxígeno disuelto, son también unos potentes antioxidantes. El color característico de los vinos blancos lo aportan los polifenoles amarillos y el de los tintos, los polifenoles rojos. Estos polifenoles, a su vez, son los responsables de proporcionar a los vinos aspereza, astringencia y complejidad. Los antocianos, también denominados "antocianinas", son los fenoles que ejercen mayor influencia sobre el color del vino. Se encuentran en el hollejo (o piel de la uva), aunque también pueden estar presentes en la pulpa y son los responsables del color rojo azulado en la uva tinta.
