Los peces hielo fueron descubiertos en el siglo XIX por pescadores de ballenas que se atrevieron a adentrarse en las frías y tormentosas aguas del océano Antártico. Al matarlos y abrir sus cuerpos para cocinarlos quedó de manifiesto que su sangre no era roja. Gracias a habitar ambientes tan gélidos, los "peces hielo" pueden vivir sin glóbulos rojos y sin hemoglobina en la sangre, razón por la que esta es traslúcida, con un tinte ligeramente amarillento, y no roja. Curiosamente, algunas de las especies de peces hielo siguen poseyendo el gen de la hemoglobina y producen esta proteína. Sin embargo, si se intenta envenenar a estos animales mediante la administración de cianuro, que se une al hierro de esta proteína e impide que esta se una al oxígeno, estos animales no mueren. Esto indica que la hemoglobina que poseen no es estrictamente necesaria para mantenerlos con vida. Ahora, un grupo de investigadores ha secuenciado el genoma de una de las especies de estos animales.
