El pulpo posee un amplio sistema nervioso, gran parte del cual está distribuido por sus ocho tentáculos. Cada tentáculo posee un nervio central que se ramifica hacia las ventosas, cada una de las cuales posee un ganglio nervioso dedicado a su control. Es conocido que las ventosas, además del sentido del tacto, poseen también la capacidad de "saborear" lo que el pulpo palpa. Investigadores de la Universidad de Harvard, en EE. UU., decidieron estudiar con detalle las células detectoras situadas en los bordes de las ventosas del pulpo de California de las dos manchas (Octopus bimaculoides). Este animal reacciona de manera diferente según la superficie que se le presenta para explorar. Los investigadores encontraron que las células receptoras de las ventosas poseen moléculas en su superficie capaces de detectar terpenoides, unas sustancias segregadas por ciertos animales para defenderse, lo que sugiere que el animal puede evitar capturar presas que resulten tóxicas.
