皆さん、納豆はお好きですか？ネバネバとかき混ぜていると、不思議と元気が湧いてくる気がしますよね。そんな納豆ですが、実は北海道とも深い縁があります。北海道は大豆の一大産地で、おいしい納豆作りに欠かせない場所なんです。その発展に大きく貢献したのが、北海道帝国大学の研究者・半沢洵先生。かつて納豆は藁に包んで作るのが一般的でしたが、半沢先生は納豆菌を培養して製造する「半沢式納豆製造法」を確立しました。そのきっかけを与えたのが、納豆菌の研究で知られる沢村真博士です。北大には今も半沢先生の銅像があり、さらに文学者の有島武郎とも親交がありました。納豆の糸のように、人と人とのつながりが新しい文化や技術を生み出してきたんですね。梅雨のじめじめした季節、北海道の爽やかな空の下で食べる納豆は、きっと格別のおいしさだと思います。
