浜松の名物「浜納豆」。糸を引かない納豆で、黒い小石のような見た目をしています。浜松の強い風とカラッとした気候を活かして天日干しで作られます。戦国時代、徳川家康は浜松城を拠点としていましたが、浜松は家康にとって苦い土地でした。武田信玄との三方ヶ原の戦いで大敗し、何度も負け戦を経験しました。泥と汗にまみれた家康のそばにあったのが浜納豆でした。浜納豆は大豆を麹で発酵させ、塩水につけて熟成させて干して作ります。一粒噛むと、まず塩気、次に苦味、そして発酵した大豆の旨みがゆっくり鼻の奥に通ってきます。白いご飯に一粒置くとよく合います。保存ができ、持ち運べ、少量で力になる浜納豆は、戦国時代の条件を完璧に満たした食料でした。家康が天下を取るために使ったのは刀だけではなく、時間を読む力、人を待つ力、食の知恵でした。浜松が育てた浜納豆こそが家康のお城だったのではないでしょうか。
