It's a decision every distillery has to make. And one of the factors that goes into that decision making is the weather. At Old Monroe Distillery, they can have huge temperature swings, and aging their whiskey in a very traditional method (similar to Kentucky) has proven to produce flavor profiles that are unique and flavorful. It's something that Adam and Laura are aiming for in their whiskey.
