Probablemente todos estemos familiarizados con las almendras amargas, que de vez en cuando pueden aparecer acompañando a las almendras dulces. Las almendras amargas son ahora la excepción a la regla, pero hace unos miles de años eran la regla, porque el ancestro de las almendras actuales era tóxico. La excepción eran los escasos mutantes que habían perdido la capacidad de sintetizar un compuesto amargo y tóxico llamado amigdalina (amígdala significa almendra en latín) y que producían almendras dulces. Al ingerir una almendra amarga, una vez dentro del cuerpo, la amigdalina puede liberar cianuro y provocar una intoxicación si la dosis ingerida es alta. Un día, un miembro de nuestra especie tropezó con un almendro mutante que carecía de amigdalina. Sus semillas se podían comer y eran altamente nutritivas. Este inteligente individuo pensó que podría ser muy beneficioso tratar de cultivar este árbol mutante y usar sus semillas como alimento.
