I will  explore five key benefits of chia seeds, backed by personal experiences and research. Chia Seed Mini Muffins1 ½ cup cornmeal1 cup whole wheat flour or white1 tsp salt1 tsp. baking powder2 cups buttermilk* or  Milk2 lg eggs¼ cup oil1/3 cup honey2 Tbsp chia seeds Preheat the oven to 350 degrees, and grease mini muffin tins with nonstick spray.Mix and set aside the cornmeal, whole wheat flour, salt, baking powder, and baking soda (if using), in a large bowl. In a separate bowl mix the buttermilk or milk, eggs, oil, and honey. Combine the two bowls together. When the mixture is combined, add the chia seeds.  Don’t over mix.Fill mini muffin tins 2/3 full, and bake for 8 - 10 minutes. Makes about 48+ mini muffins.*If you use buttermilk, also add ½ tsp baking soda to the dry ingredients. Health, fitness, fiber, blood sugar, bone density, gut health
