Francesca Rolando was born and raised in Italy. After attending the prestigious boarding school, Educandato Statale Setti Carraro Dalla Chiesa, in 1994 she moved to Washington State as a High School Exchange Student. She received her bachelor’s degree in International Relations from Methodist University in North Carolina in 2003. She went on to get her master’s degree in Human Relations from the University of Oklahoma in 2006. Francesca served as the Executive Director of several non-profit organizations and is now an independent claims adjuster. In 2009 Francesca was diagnosed with Hashimoto’s disease. After struggling to manage the disease for several years, she chose a vegan lifestyle, on the advise of her doctor. She believes it is the best decision she could have made to manage the disease and for her overall health. In this episode of the podcast she speaks openly about the physical and mental struggles with managing her health.
