This is one of our favorite times of the year! Days are warming up, Red-Wing blackbirds have arrived in the Northeast which means it's time to get out and tap Sugar Maples and make syrup. Sugar maples are tapped for the high sugar content found in the sap. Sugar maples are native to the hardwood forests of eastern Canada and the northern parts of the Central and Eastern United States, from Minnesota eastward to the highlands of the upper eastern states and the interior Midwest. On this episode we discuss the when and HOW of maple sugaring and how easy it is to produce your own. We visited our friend Glen Niese at his farm where he puts out 14,000 taps a year!Once you have maple syrup, there are plenty of RECIPES including a new trend, Bourbon barrel-aged maple syrup!
