Here is your KirbyCo Builders, Inc cooking tip of the week from Captain Kirk: Fish Cakes!   First make this…   Smoked Fish DIP   Smoke approximately 1-2lbs of fresh fish using Hickory or Apple chips Refrigerate the smoked fish overnight. Following day shred the fish and crumble in a large bowl. Add 1 cup mayo 1/2 cup sour cream 1 tbs Westershire sauce 1 Vidalia onion diced Teaspoon of Old Bay 1/4 tbs of salt 1 tsp lemon juice 3 tbs tiger sauce or more if desired Serve with captain wafers or crackers   Blend ingredients well n chill.   Fish Cake: To the above recipe add 1 egg to make enough for 2-3 cakes, roll in panko and sauté on low heat with butter or sesame oil till brown.
