My guest today is Professor Frédéric Leroy. Working in bio-engineering Sciences and Applied Biological Science, Frédéric's research in the field of food science and (bio)technology is astounding. Frédéric's work primarily deals with many ecological aspects and functional roles of bacterial communities in (fermented) foods, with a focus on the role of animal products in the diet.
