Red Hot Beef Market

Last week the overall beef market took a sharp turn higher and this week is more of the same.  Every cut of beef is moving higher again this week.  Post holiday harvest was a pretty modest 615K head which is up from the holiday week of 573K head but these restricted harvest numbers continue to pressure the market higher.
