La investigación reciente sobre la comunidad bacteriana que habita nuestro intestino, la llamada microbiota, o flora intestinal, ha revelado que las bacterias más beneficiosas de la flora son las estrictamente anaeróbicas, es decir, las que no son capaces de utilizar el oxígeno para conseguir energía metabólica. En otras palabras, estas bacterias obtienen energía obligatoriamente de los procesos de fermentación. Estudios recientes han revelado que las células de la superficie del colon, en condiciones normales, consumen una enorme cantidad de oxígeno en su metabolismo. Este consumo de oxígeno es favorecido por algunos de los productos de fermentación producidos por las bacterias anaeróbicas, entre ellos el ácido butírico, similar al acido acético del vinagre, pero con dos átomos de carbono más. El ácido butírico es rápidamente catabolizado para obtener energía, lo que consume casi todo el oxígeno transportado al intestino por la sangre.
