En los últimos años, los productos sin gluten han ganado un lugar destacado en supermercados, restaurantes y dietas de moda. Sin embargo, es importante preguntarse: ¿realmente todos necesitamos evitar el gluten? El gluten es una proteína presente en el trigo, la cebada y el centeno. Para personas con enfermedad celíaca, una condición autoinmune que afecta aproximadamente al 1% de la población, consumir gluten puede causar daño intestinal severo. También existe la sensibilidad al gluten no celíaca, una condición menos entendida, pero que puede causar malestar digestivo en ciertas personas. Para estos grupos, los productos sin gluten no son una moda, sino una necesidad médica. Sin embargo, para la gran mayoría de la población, el gluten no representa un problema.
