Hoy vamos a retomar un tema que ese ha puesto de actualidad gracias a una campaña para limitar el consumo de carne. De este tema hablé en febrero del año 2009. Decía entonces que los estudios realizados indicaban que, según el método de producción, cada kg de ternera resulta en la liberación a la atmósfera de entre 140 y 260 gramos, de metano, un gas incoloro 23 veces más opaco para la radiación infrarroja que el CO2. ¿Cómo esta la situación hoy? ¿Qué nuevos conocimientos tenemos hoy sobre estos asuntos? No cabe ya duda de que el consumo excesivo de carne impacta negativamente sobre la salud media de las personas y aumenta el riesgo de cáncer y de enfermedades cardiovasculares. Al igual que ha sucedido con el CO2, que ha aumentado de unas 290 ppm a principios de siglo XX a cerca de 415 pm hoy, la cantidad de metano en la atmosfera ha aumentado de las 722 partes por millón antes de la revolución industrial, a las 1892 ppm en 2020.
