Aged for 12 months in 70% new oak barrels, this is still a young wine with rough edges to spare, but as I say in the podcast - "drink 'em young!" The intensity and "angularity" (sharp edges) are why it pairs so well with Romulus! Fermented on skins 12 to 18 days after which the skins are pressed and inoculated with malolactic bacteria to initiate a 2nd fermentation. Then the wine is filtered and stabilized prior to bottling.Bright ruby red in color (which suggests good acidity!) Medium-bodied with well-balanced tannins and the telltale Pinotage burnt rubber/leather note.
