The grapes are harvested separately when perfectly ripe, based on grape tastings performed before the harvest. Each grape variety is vinified separately. Some of the Syrah undergoes cold maceration to preserve the integrity of its aromas, whilst the rest of the Syrah and the Grenache grapes go through traditional maceration (de-stemmed harvest). Vinification is temperature controlled (maximum 25°C). The wine is not filtered or clarified, remaining cloudy.
