Chef Jamie Simpson is the Executive Chef of the Culinary Vegetable Institute, a sustainable vegetable farm that hundreds of Chef’s throughout the US use to source vegetables for their restaurants. They live on the farm/institute teaching Chefs from around the country how to reduce waste when using vegetables and just recently launched a new book; The Chefs Garden!
