    Hot, Fat, and Louder

    Wake-up calls. We’ve all had them. Some are quiet voices nudging us or budging us to change. Other calls are screaming at us that we don’t have time to dwell on much – like a Stage IV cancer diagnosis or a heart attack. Then there are those calls in between that speak to us, that we file away in our filing cabinets in our brain, ready to pull for review when necessary. Thomas Friedman’s book, Hot, Flat, and Crowded, was an early wake-up call for me. It stayed on my bookshelf long after others had made their way back to the library or donation center. Along with the book, The World in 2050, Friedman’s book made me think about our world, our environment, and how we live and potentially could be living – if we don’t listen to the subtle and not so subtle alarms in our environment.     One More Christspiracy Review

    Christspiracy - the documentary that is a bit under the radar right now but probably will make an appearance to the general public soon. From the filmmakers of Cowspiracy, Seaspiracy, and more comes a third documentary to fill out the trilogy of how we answer the animal question.  I don't want to give away all the "meat" of the documentary, but let's take 25 minutes and walk through a few of the suppositions, theories, and proposed evidence to take a deep dive into our rationale of eating meat, and what are possible reasons to eat less or no meat, including the spiritual side of things. These are my thoughts based on watching the movie and parsing together other literature and research I've done in the past to ponder vegetarianism and veganism in this podcast.     Matt Fetissoff - Entrepreneur, Gardener, Father and Chef - Merging Permaculture and Plants into a Vegan Holistic Lifestyle

    Matt Fetissoff and his family began growing food on their little slice of Fort Collins, Colorado land in 2013. Years before, Matt learned about the industrialization of modern food starting with the book The Omnivore’s Dilemma, then a little film called Food Inc., and subsequently permaculture from people like Adam Brock and Brad Lancaster. These experiences revealed how important growing your own food can be, and soon his mind was full of garden plans while his heart focused on feeding his family. It wasn’t long before his kitchen was overflowing with everything from squash to tomatoes, challenging him to put the harvest to good use. Around that time his family tried to purchase sustainable locally raised meat, eggs, and dairy, but there was lingering doubt that their lifestyle was just. Then in the spring of 2017, he and his wife had a big conversation about some undercover footage she found on the internet and were frustrated that they had supported such energy-intensive and unbelievably cruel industrialized farming practices for so long. From that day on they were vegan. Not long after, they saw the films Cowspiracy, Seaspiracy, and The Game Changers which helped fortify their lifestyle change, and it was clear to see that leaving animal products behind meant exploring cooking and recipes in an entirely new, beautiful & healthy direction. Food has driven Matt’s life in some big ways, including his work with the non-profit The Growing Project where he helped grow crops, organize events, and cook communally shared meals at their educational garden using ingredients freshly harvested on-site.     How to Eat Plant-based on the Big Island

    The Big Island is a dream. Volcanos, fern forests, cobalt blue vista views, and more. But did you know it was rated one of the most vegan-friendly states in the United States? This was comforting news as we were preparing our travel arrangements for a February trip. As a plant-forward chef and a full-on vegan husband, it’s a conundrum of where and what to eat when traveling. But, good news, Hawaii had a lot to offer the plant-based traveler! So let’s chat about how to eat plant-based on the Big Island with some off-the-beaten trail options. As I did my research, I found many restaurants and cafes that offered plant-based options. From tofu to jackfruit to complete vegan cafes, I felt confident that if we wanted to go out to eat, we would have no problems at all. Rarely did I find a non-chain restaurant that didn’t have at least one vegetarian or vegan option – and it wasn’t spaghetti marinara. Yes, Hawaii prizes its ahi tuna, homegrown beef, and pork, but there is an uptick in the interest in plant-based or vegan lifestyles possibly because they are ocean-bound and self-sufficient, or catering to many visitors. Although Oahu is the most vegan-friendly Hawaiian island, (bigger metro areas, more visitors, I get that) I give my hats off to the Big Island and its interesting options if you know where to look. To that end, he’s obtained certificates in areas such as Positive Psychology, Workplace Culture, and Building Effective Teams and a Master's level education in Applied Positive Psychology & Coaching Psychology. He co-founded Flourish Veterinary Consulting LLC to bring the knowledge he's obtained to life.     Breaking Through with "Yes"

    Growing up on a big farm in Eastern Colorado, KT Thompson’s life always revolved around agriculture and seasonal "stuff" - except a 13-month stint in which she had a normal shift job as a phlebotomist. She completed her undergraduate in Microbiology and currently is a high school science teacher in rural Northeastern Colorado. In recent years, she has traveled to Europe with a group of students, began beekeeping, completed a Master of Science in Biology through the University of Nebraska in Kearney. Her first manuscript, "Supplemental Feeds and Foraged Corn Grain Dust: A Comparison of the Number of Days Survived In Vitro by Young Adult Honey Bees (Apis mellifera)" has been accepted for publication in the Journal of Apicultural Science. KT started teaching and mentoring other beekeepers and has completed all coursework towards her Journeyman Certification through the Colorado State Beekeepers Association. She is the president of the Eastern Colorado Beekeepers Association and has been elected to the CSBA board as an advisor. KT is a life-long learner, exploring life, discovering personal aptitudes and strengths, and focuses on the simple “yes” statements to continue self-development, be a bit impulsive, spontaneous and living life to the fullest.

    Claudia Bouvier grew up surrounded by incredible artisanal foods—and her large Italian family.
