In a glass bowl, cover thighs with veg. oil and lemon pepper, be generous! In a pan, cover bottom with veg. oil and heat to med high, place skin side down and hear the sizzle. 4-5 minutes each side. Depending on the thickness of the thigh, sometimes need longer. When thighs are nicely browned, add lemon pepper and orange juice to the pan. Place the pan in the oven for 30 minutes. Cook rice in instapot. In another pan, place green beans in water and bring to a boil, cook until al dente and remove from water. Connect: @ drtaylorharperatbettertogether______ Cosmic Brownie Cookies 1/2 c unsalted butter softened1/2 c light brown sugar1/4 c granulated sugar1 large egg1 tsp vanilla extract2 tbsp light corn syrup1/4 tsp baking soda1/4 tsp salt1/2 c dark cocoa powder1 1/4 c all-purpose flour Toppings:3/4 semi-sweet chocolate chips1/4 c heavy creamRainbow chip sprinkles Instructions:Preheat oven to 350FIn a large bowl, use an electric mixer on medium-high speed to cream softened unsalted butter, light brown sugar, and granulated sugar for 2 minutes until light and fluffy.Add the egg, vanilla extract, and light corn syrup and mix on low speed until combined. Scrape down the sides of the bowl so everything can combine. Add in baking soda and salt and mix for another 5-10 seconds until combined.Lastly, add dark cocoa powder and all-purpose flour and mix on medium until combined. Scoop dough into 1/4 c sized scoops, roll into balls, then gently flatten each dough ball into a 1/2" thick disc; this will help them spread instead of be puffy. Bake at 350F for 11-12 minutes. Do not overbake. The centers may look a tiny bit wet but will continue to bake on the hot pan, allowing them to firm up without overbaking. Connect with Julie: https://calendly.com/jsgactioncoach/discoveryLinkedIn: https://www.linkedin.com/in/juliesealgaustad/Instagram: https://www.instagram.com/JSGActionCoach*****Nana's Banana BreadHeat oven to 325 degrees Peel three bananas large or 4 smaller and crush with fork Grease a loaf pan with baking spray or solid Crisco Put these next ingredients in mixing bowl as indicated in directions 3/4 to 1 cup sugar (depends on how sweet you like it) I have substituted 1/4 to 1/2 brown sugar with 1/2 cup regular for a change in taste 1/2 cup canola oil Beat those two ingredients together for about 1 to 2 minutes Add 1 egg close to room temperature and beat again You can add 1 tsp vanilla at this point or not as you choose. In a separate smaller bowl put 1 and 1/2 cups of flour with 1 tsp soda and 1/2 tsp salt. You could add any dry spices, 1/2 to 1 tsp if you like. Sometimes I do, sometimes I don't. Stir to combine dry ingredients. Add the bananas to your liquid mixture, mix until blended. Add dry ingredients and mix only until well combined. You can add nuts, chocolate chips, cranberries, whatever at this time, give bread a quick stir to blend them in and then... Pour into baking loaf pan Bake for about 50 minutes, check by using tooth pick in center, if it comes out clean bread is done, if still a bit wet, cook about 5 to 10 minutes more watching closely. When done take out and put pan on wire rack for ten minutes to cool Then use knife to loosen edges and take out of loaf pan. Once cooked through, remove and place in an oven safe casserole dish and set aside.4. In a separate bowl, mix dressing, mayonnaise, dill pickles, onion powder, garlic powder, salt, and pepper. 5. Take 3/4 of mixture and combine with the ground meat and half of the cheese. 6. Top with the remainder of the cheese and cover the whole casserole with tater tots.7. Cook in the oven until tater tots are golden brown and mixture is bubbling. 8. Remove from the oven and drizzle the remainder of sauce mixture on top. 9. If using store bought pesto, skip to next step. 2. If making pesto, put all ingredients into a food processor or blender and blend until smooth.3. Get frying pan prepped with oil or oil spray. Make eggs over easy. 4. Once eggs are in pan, move to side and add veggies of choice to pan (salt and pepper them or use everything but the bagel seasoning). Roast veggies till warm/tomatoes till blistered.5. Heat polenta according to instructions. 6. When complete, add in Parmesan cheese per your taste, 1/2 tbsp Italian seasonings/parsley, dash of salt and pepper (less salt if you put more cheese).7. Assemble polenta, veggies and egg in a bowl/plate. Toast in the oven until golden, approx 15 min. Turn oven up to 400 degreesPour Arrabiata sauce or pasta sauce into the dish until there's approximately 1.5 - 2inches of sauce in the dish. (If using basic red pasta sauce, add red pepper flakes to taste. )Slice goat cheese into approximately 2 inch sections and place into the sauce. Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.2. Prepare mushroom caps by removing/discarding stems, rinsing and patting dry 3. Place mushroom caps gill side up on baking sheet and spoon on a thin layer of marinara sauce onto each cap. Spread sauce with back of spoon. Sprinkle with Italian Seasoning for added flavor (optional).4. Sprinkle toppings evenly across mushroom caps. Cover each mushroom with a generous layer of shredded mozzarella cheese. Garnish with fresh basil.5.
